Grilled Steak Skewers with Chimichurri

For this mind-dazzling dish, you need the following ingredients:These are my kids’ favorite dish. They empty their plates in seconds. And the best part? They come along with a healthy twist (many health bolstering herbs).

  • 1/3 c. Fresh basil
  • 1/3 c. fresh cilantro
  • 1/3 c. fresh parsley
  • 1 tbsp. red wine vinegar
  • Juice of 1/2 lemon
  • 1 Garlic clove, minced
  • 1 shallot, minced
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 c. extra-virgin olive oil, divided
  • kosher salt
  • Freshly ground black pepper
  • 1 red onion, cut into 1 1/2″ chunks
  • 1 red pepper, cut into 1 1/2″ pieces
  • 1 orange pepper, cut into 1 1/2″ pieces
  • 1 yellow pepper, cut into 1 1/2″ pieces
  • 1 1/2 lb. sirloin steak, fat trimmed and cut into 1 1/2″ chunks

To begin with, soak 12 wooden skewers in water for 10 minutes. While this is going on, make the Chimichurri sauce in a blender:

  1. Pulse together basil, cilantro, parsley, vinegar, lemon juice, garlic, shallot, crushed red pepper flakes, and 2 tablespoons of olive oil.
  2. With motor running, add ¼ cup more olive oil until smooth, then season with salt and pepper.

Now that the sauce is done, you can thread the onions, peppers, and steak onto the soaked skewers. If you want to make them extra sturdy, use two skewers per kebab.

Arrange the skewers on a platter and season generously with salt and pepper. Next, drizzle with 2 tablespoons of olive oil, turning skewers to coat.

Now, it’s time to grill (my favorite part). Place the skewers over high heat for about 10 to 12 minutes and make sure you turn them over from time to time so that they get brown on all sides.

Let sit for 5 minutes and enjoy.

An outing is nothing without its dessert. At least in my home where everyone has a cankering for sweets. However, we are painfully aware of the negative impact that too much sugar can have on our health. Therefore, we try to limit its intake as much as possible.

The following recipe gives you only 5 servings, but you can add more depending on how many people you have over.

For the actual pudding you will need:

  • 10 dates, pitted and roughly chopped

Frozen Fruit Ice Cream

Why buy one? When you can make a healthier and tastier version?

That has always been my motto.

Here’s how you can enjoy this ice cream. And you only need 2 ingredients:

  • 1 to 2 bananas
  • frozen berries of your choice

Now, get to preparing it:

  1. Cut a banana or two into chunks and freeze it for at least 12 hours.
  2. Add the frozen banana chunks to a food processor along with a few frozen berries of your choice – strawberries, raspberries, blueberries, etc.
  3. Blend in the food processor until it becomes nice and creamy, just like ice cream.

Tip: The more berries you add, the more it will be like sorbet. Using fewer berries and more banana will make it creamier.

I must warn you though, people will ask you where you bought this ice cream. Be prepared to share with them this recipe.

If you have a bit more time on your hands, then I highly recommend you try this cake. My jaw dropped when I first tasted it. We’ve been making this on several occasions since then.

Here’s what you need:

  • 3/4 cup coconut flour
  • 1/4 cup arrowroot powder
  • 3/4 cup cacao powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp sea salt
  • 8 eggs
  • 3/4 cup coconut oil or butter, melted (plus more for greasing pans)
  • 1 cup honey
  • 1/2 cup milk (regular or coconut)
  • 1/4 cup strong coffee (or coffee substitute)
  • 1 Tbsp apple cider vinegar or lemon juice
  • 2 Tbsp peppermint extract
  • Chocolate Peppermint Frosting (recipe below)
  • Crushed peppermint candy

Now it’s time to get busy:

  1. Preheat oven to 350 degrees F.
  2. Grease two 9-inch cake pans and line the bottoms with parchment paper.
  3. Mix together coconut flour, arrowroot, cacao, baking soda, baking powder and sea salt in a small bowl and set aside.
  4. In the bowl of a stand mixer, with whisk attachment, whisk the eggs.
  5. Add oil/butter, honey, milk, coffee, ACV or lemon juice and peppermint. Continue to mix until combined.
  6. Add the dry ingredients into the wet ingredients and mix on low speed until ingredients are incorporated.
  7. Stop the mixer and scrap down the sides (you might need to do this a couple times).
  8. Turn mixer back on and beat on high speed for about one full minute to make the batter fluffy.
  9. Divide the batter between the two prepared pans.
  • Bake for 25 to 30 minutes. Check at 25 minutes with a toothpick… it should come out with a few moist crumbles. Don’t overbake or the cake will be dry. If it is still too moist, bake for another 2 to 5 minutes (the cake was perfect at 27 minutes for me).
  • Allow to cool on a wire rack for about 10 to 15 minutes.
  • Use a knife to loosen the sides of the cakes from the pans and turn them out onto the wire rack and allow to cool completely.

Chocolate Peppermint Frosting

For this you will need:

  • 2 cups chocolate chips
  • 2 cups butter or full-fat coconut milk
  • 2 tsp peppermint extract

Now it’s time to work it:

  1. In a medium saucepan, melt chocolate chips and butter over medium low heat. Stirring frequently to keep from burning.
  2. When melted, turn off heat and stir in peppermint extract.
  3. Let it cool completely and chill in the fridge until solid.
  4. Remove from fridge and allow it to come to room temperature. You will have to keep a close eye on this as you don’t want it too warm. Otherwise, you’ll risk turning it into gooey mess, also you don’t want it too firm that it just balls up inside the whisk.
  5. Scoop the mixture into a mixing bowl and beat on medium for about 2 minutes or until light in color and fluffy.

Using coconut milk:

Chill can of full-fat coconut milk in the fridge overnight. When ready, open can and pour off the water (save it for smoothie or toss out). Scoop only the solid white coconut cream into a medium pot. Add the chocolate chips and follow the instructions listed above.

Once you’ve finished with all of this, it’s time to put the cake together:

  1. Carefully move one of the cakes unto a serving plate of your choice.
  2. Top it thickly with Chocolate Peppermint Frosting and sprinkle with crushed peppermint candy (don’t be shy with this!).
  3. Carefully put the second cake on top and top it off with the rest of the frosting.
  4. Sprinkle more crushed peppermint candy.

And now you have your beautiful cake.
