By now, you know just how healthy cauliflower is. It contains plenty of essential nutrients, highly beneficial to our bodies.
Cauliflower is rich in:
- vitamins B1, B2, B3, B5, B6 and B9
- Omega-3 fatty acids
- vitamin C and vitamin K
- even proteins
So then, the best way to benefit from all of these essential nutrients is to consume it as much of it as you can.
That’s definitely doctor’s orders
Ok, so then, you might ask yourself how exactly to prepare it. Well, let’s see.
1. Pasta with Roasted Cauliflower, Walnuts and Blue Cheese
7 oz. of pasta
1 cauliflower, washed
3.5 oz. of blue cheese (I used Camembert)
1 tablespoon of honey
3.5 oz. of nuts
This one’s really simple. Here’s what you need to do:
Boil the pasta in salt water. In a different pot, boil the cauliflower bouquets for ten minutes, give or take, until the cauliflower softens up. Then remove them from the water.
Then fry the nuts in a pan for no more than 2-3 minutes, without adding any fat or oil.
Drain the pasta and mix it with 50gr of blue cheese and 1 teaspoon of honey.
Add the cauliflower and the nuts, and parsley if you want.
2. Cauliflower and cream cheese with garlic
- 10 oz. of cauliflower
- 5 oz. of cream cheese
- 1 tablespoon mayonnaise
- 2 garlic cloves
- salt, pepper to taste
Boil the cauliflower in salt water – the results should be cauliflower al dente.
This means that you need to cook it just long enough so that it is neither hard nor soft but is firm and slightly chewy.
Ok, now take the cauliflower out of the pot and let it drain of all the water.
Once it has cooled down, all you need to do is put the cauliflower, alongside the rest of the ingredients (cream cheese, mayo, garlic cloves, salt and pepper) in a blender.
Before serving this mouthwatering cauliflower and cream cheese, make sure you let it cool off in a fridge for about an hour.
3. Chicken Cauliflower
Ingredients (For 3 people):
½ lbs chicken thighs or breast
½ lbs. cauliflower
3 oz.of tomato sauce
salt & pepper
1 tablespoon olive oil
Cut the chicken, salt and pepper it and fry it in a pan, in a little bit of oil.
Wash the cauliflower it and boil it for 10 minutes in salt water.
In a pan, fry the minced onion for 5 minutes, then add the tomato sauce and cook for another 5 minutes.
Add the cauliflower and a little water and let it boil for another 20 minutes.
If you’d like, you can also sprinkle a little bit of garlic and parsley over the cauliflower.
Serve with baked chicken. Good appetite!
4. Broccoli Cauliflower
1 Broccoli (approx. ½ lbs.)
1 cauliflower (approx ½ lbs.)
0.5 oz. butter
1.5 oz. of Parmesan
6.5 oz. of vegetable sour cream
salt & pepper
1 teaspoon ground cumin seeds
Fresh leaves of broccoli and parsley
Separate the cauliflower and broccoli into small bouquets and soak them in two separate dishes, in cold water in which you previously added bicarbonate (add 1 teaspoon of sodium bicarbonate in 3-liters of water).
Now take two pots and add water, which you’ll bring to a boil. Add a bit of salt when the water starts boiling.
Put the cauliflower in a pot, and the broccoli in the second pot.
Allow the broccoli to boil for about 3 minutes and then remove it from the water.
Then let the cauliflower boil until it softens slightly, and take it out of the water.
Put the cauliflower in a yen pot, and over it put a few pieces of butter. And now, put this pot aside for a few moments and puree the broccoli.
In a blender add the broccoli, along with the vegetable sour cream and cumin seeds. And pour the puree over the baked cauliflower, in the yen pot.
Put the pot in the hot oven at 180 degrees and leave for about 15 minutes. Once you take it out, add the parmesan over and let it in the oven for another 10 minutes.
Sprinkle the food with green parsley and basil. It’s delicious.
